Tofu and Truth in Texas


The dynamic pace of life is responsible for many exciting new trends.  One not to be missed is the trend in healthy eating for more and more Americans every day. In  Franchesca Silveira’s latest blog post, she reveals a recipe for something that I could never have conceived on my own. It is vegan, full of good cholesterol, and is a heart healthy breakfast choice.

The recipe adds a minor twist on a timeless Texan food classic, eggs and chorizo. That is where the similarities start to peel away. The recipe 86’s the usual eggs in favor of the artery friendly egg alternative, Tofu. The chorizo also comes from the soybean, and the combination sure does look and sound delicious.

Dishes like this show that eating healthy can be done, and flavor need not be compromised. The trend in healthy eating, and home gardening is thriving here in Texas as well.

The climate and chance to grow so many organic vegetables, in home gardens, and boxes, is alive and well here in Texas. Today’s austerity economically is forcing us to become DYI er’s and the directions you could take your life in Texas is as wide open as the range is in West Texas, out by Big Bend National Park, Texas overlooked corner. Surprises In The Texas Hill Country


Texas produces the fifth highest amount of wine in the US. That’s a surprise.  The American Southwest extends eastward all the way to Georgetown, Texas. That’s another one I was not aware of.  It seems the area of the Lone Star state known as “Hill Country”, is full of pleasant surprises. The area historically, allowed for cultural immersion between Germans and Spanish, which led to the accordion being used as a popular instrument in Tejano music. The area is also home to some interesting, endangered and endemic species, which call the Balcones Canyon lands National Wildlife Refuge home. The city of Georgetown, lies in the Hill Country and is a very popular retirement area for millions of boomers. In 2007 the city got a very favorable rating from the seventh edition of Retirement Places Rated, and this has continued to solidify the area’s reputation as a prime destination.


The city is rife with cultural things to do for just about any age and interest.  There is live popular and classical music. There are guided tours of the courthouse. and art exhibits.  The calendar of events is full of things to scroll through. See the link below.

This climate begs for fun in the sun, and all the SPF in the world might still leave you a little longing for moisture. There are ten or more Spas in the area to rejuvenate your body and soul.

“Roses are red” or so the old saying goes. Texans may be eager to elaborate on that. Roses are yellow in Texas. Strawberries are red and Texans even see it that way. In Pasadena they celebrate the parade of roses, California that is. In Pasadena, TEXAS, they celebrate strawberries.

The 44th annual strawberry festival takes place in Pasadena this year on May 19th, 20th, 21st 2017. It is one of the biggest fund raisers to take place in the super sized Lone Star state. It is encouraged and promoted by the San Jacinto Day Foundation, a 501(c)# non-profit. The funds go to support several educational initiatives in the Pasadena area for high school students and also those at the post secondary level.

The festival is priced afford ably, and that is good news. There is so much going on, it may need more than one trip! There is the Buzzberry Kids Adventure Zone, which is a hands on learning by fun area. There are several other children’s activities, including pig races, and balloon rides.

The whole community gets involved in the celebration, and there is a beauty pageant before the festival. There is a parade, and in past years a Guinness world record was set. In 2005 the world’s largest strawberry shortcake was prepared there.

The concept of a farmer’s market instantly brings to mind a multitude of positive images. Family, fresh fruits and vegetables, the scent of alfalfa, and a nostalgic aura to the whole experience.

In today’s world where GMO dominated food is so readily available, this connection with tradition is even more important. Wellness is best when maximized and a healthy diet is a major piece of the puzzle.

The market runs from early Spring until a week or so before Christmas. Texas weather is as hospitable as the people most of the time, so there are three full seasons of enjoyment to be had.

Market square in Grand Prairie is the spot. The city of Grand Prairie is a medium sized suburb of the Dallas/Fort Worth area. The economy is solid, with the school district, and some defense contractors, and some other high tech industries chained firmly as anchors.

Adopting a pet is also a self less undertaking, and with the trail system available in Grand Prairie, the benefits of a walk should be available to the canine you adopt, if that is your choice. The city is also one of many cities in the US designated “A tree city”.

The Park Department has received some lofty praise nationally, and this really should affect livability, and attract buyers.  The city was awarded the National Park and Recreation Association (NPRA), Gold Medal, for excelling in a wide array of factors.

The Merry Month of May in Killeen

Killeen Texas is a community that has an interesting history, and a bright future.  The city was originally founded in the late 1800’s as a railroad stopover, as the tracks began to criss-cross the Lone Star State.  The town remained relatively small until the early 1950’s. This is when the US Army commissioned Fort Hood as a permanent base.  The base has grown over the years to become one of the Army’s major bases. The city has grown right along with it, from a small population in 1950, to the booming metropolis of today. There have even been some relatively famous residents to come from Killeen. Notably, Elvis Presley, and Robert Griffin III, the pro football quarterback.

 May brings on the Green Avenue Farmer’s Market. The Market is open three days a week, which is convenient. Fresh, local, fruits, vegetables, dairy, and crafts, are available. There is nothing else as enjoyable as a stroll through a Farmer’s market on a sunny day. Life’s simple pleasures.

 May 18-20th features Rodeo Killeen. The 70th annual Rodeo is an affordable family event. The usual rodeo events are sprinkled over five locations over the weekend, and there will be a crowning of the 2017 rodeo Queen. This is a great way to experience some family fun, cowboy style.

 The economy is sure to remain stable in the area, as Fort Hood provides an anchor like no other locally. The base employs over 58, 000
people, and this certainly provides a base for the town’s business.

The town also knows how to have a good time. There are some nice family events planned in May. There is a sleep over night for mothers and daughters.
There is live music in the Amphitheater on the final Friday of the month. The event is alcohol free, and family friendly.
